Well Mr Geek that's what this site is all about so you're in the right place.
You can't "re-mix", as in put the guitar over there and the snare drum over there, etc. but you can use the placement of instruments and vocals in the stereo and distribute them across 5.1 channels. We call that "converting" or "upmixing".
Take a look in the wiki section of the board for details.
As a math teaser, we move the stereo into the frequency domain with Phase Vocoder style FFTs and (at your choice) do either quadratic or trigonometric operations to turn the 2 ch. input into 5 ch. output (The .1 channel happens in the time domain) and then put it back in the time domain with inverse FFTs. Think about what would happen if you took the ArcTangent of the ratio of Left amplitude vs. Right amplitude (in each frequency bin), hint, hint...
